Yummy Egg Thing, Casserole For Onefeatured

This is our Christmas morning breakfast, most years.  So delicious.  To make things easier in the morning, the night or a few days before you can:  fry and chop the bacon, toast and chop the English muffins, and chop the tomatoes.  This recipe is best with a lightly poached egg.  You could do a lot of variations with this—add spicy things, or greens, etc.  I made a triple recipe, since 3 of the 5 of us eat eggs.  (What’s wrong with the other 2???)

Ingredients
  • 1 English muffin
  • 2 slices bacon
  • 1/2 cup cherry tomatoes
  • 2 eggs
  • 1/2 cup heavy cream
  • 1/2 cup grated Cheddar cheese

Instructions
  1. Slice the English muffin in half and toast it. Tear or cut into small pieces.
  2. Fry the bacon and cut into small pieces.
  3. Dice the cherry tomatoes.
  4. Lightly poach 2 eggs. (To poach eggs: bring saucepan of water to just before a boil *a high simmer* on medium high. Add a splash of white vinegar, about 1-2 tbsp. Slide 2 eggs into pan on opposite sides. Let cook about 5 minutes for a light poach. Remove with slotted spoon and cool.)
  5. Preheat oven to 425 deg F. Layer in a large ramekin or oven proof bowl, from the bottom up: English muffin, bacon, tomatoes, both eggs, bacon, tomatoes, English muffin. Pour cream over the top. Top with cheese. Let rest for 15 minutes so that the cream is absorbed.
  6. Bake for 15 minutes. Let cool and rest for 5 minutes before serving.
